This sandwich is actually so DELICIOUS and so EASY that it has become a part of my week night rituals. I always am switching breads to jazz it up a bit, and I usually make extra and wrap it in pita bread for lunch the next day. Wrapped with some goat cheese isn’t bad either!

That looks like an amazing sandwich. I’m usually not into red bell peppers but I’d take a bite out of this!
